Pumpkin Pie Ice Cream

I was itching to make some ice cream and decided that pumpkin pie ice cream was perfect for the early fall season. Problem was, I didn't want to make a custard and had trouble finding recipes I was truly happy with. So I did some research and came up with one of my own. Please note that due to the moisture content, this ice cream freezes hard, so either eat and serve it freshly frozen, or give yourself a lot of time to defrost it for company! It's still pretty creamy, but to die for direct out of the ice cream machine.

1 3/4 cups pumpkin puree (15 oz can)
1 1/2 cups heavy (whipping) cream
3/4 cup brown sugar, packed
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg (I never actually measure nutmeg, I
just grate until it looks like the right amount)
1/8 teaspoon ground cloves
1/8 teaspoon ground allspice
1/8 teaspoon fine sea salt
1 teaspoon (or more) vanilla extract (this is key, it doesn't taste
like pie until you add the vanilla)
2 tbsp rum, brandy, vodka (optional) (a lot of recipes call for
alcohol to keep it from freezing extremely hard. I just checked the
freezer and the ice cream is SOLID. I skipped this step but I would
suggest you try it).

Put the pumpkin, sugar, spices, and salt in the blender. Blend until
smooth. Add the heavy cream a couple tablespoons at a time, pulsing
after each addition. Add vanilla extract and blend until combined.
Chill until cold (I chilled for three hours).

If using alcohol, blend into the mixture right before churning. Churn
in ice cream maker for about 25-30 minutes or until the consistency is
to your preference. Serve either immediately when nice and creamy, or
allow to harden in the freezer. Note: due to the moisture content of
the pumpkin, this ice cream freezes HARD. Put a layer of plastic wrap
over the top to prevent ice crystals.

homemade ice cream is so easy to make with just a freezer and some time. stir when you think about it a couple of times a day. this is peaches from the trash slightly cooked with lavender flowers (you take them out before freezing) and cream and a tiny dash of sugar. then i added fresh homemade yogurt (about 2 cups) and let it freeze. when its ready to serve, i smash it up with a spoon or if i want a smoothie i put it in a blender thingy and whizzz it up with some extra yogurt or milk. i make ice cream like this everyday and amaya thinks it's real ice cream-- except there is hardly any sugar and it's mostly fruit and yogurt.
