DESCRIPTION

Each bite of these fabulous biscuit creations is filled with a rich, creamy filling.

INGREDIENTS

Rolls
1/4 cup sweetened dried cranberries, coarsely chopped
1/3 cup Fisher® Chef's Naturals® Chopped Walnuts
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1 can (12 oz) Pillsbury® Golden Layers® refrigerated buttermilk biscuits (10 biscuits)
1/2 cup mascarpone cheese or cream cheese, softened
1/4 cup LAND O LAKES® Butter, melted
Glaze
1 tablespoon mascarpone cheese or cream cheese, softened
1 cup powdered sugar
1 to 2 tablespoons milk

DIRECTIONS

1.Heat oven to 350°F. Lightly spray 8- or 9-inch round cake pan with CRISCO® Original No-Stick Cooking Spray.

2.In small bowl, mix cranberries and walnuts; set aside. In another small bowl, mix granulated sugar and cinnamon; set aside.

3.Separate dough into 10 biscuits; press each biscuit into 3-inch round. Place heaping 1 teaspoon of the mascarpone cheese on center of each biscuit. Bring all sides of dough up over filling, stretching gently if necessary, and gather in center above filling to form a ball; firmly pinch edges to seal. Roll each biscuit in melted butter, then roll in sugar-cinnamon mixture. Place 1 biscuit in center of pan. Arrange remaining biscuits, seam sides down and sides touching, in circle around center biscuit. Pour remaining butter over biscuits; sprinkle with remaining sugar-cinnamon mixture.

4.Reserve 1/4 cup cranberry-walnut mixture; sprinkle remaining mixture over biscuits.

5.Bake 28 to 33 minutes or until biscuits are golden brown. Place heatproof serving plate upside down on pan; carefully turn plate and pan over. Let stand 1 minute, then carefully remove pan.

6.Sprinkle reserved cranberry-walnut mixture over coffee cake. In medium bowl, stir glaze ingredients until smooth. Drizzle glaze over top of rolls. Serve warm.

DESCRIPTION

In this easy casserole-style pizza, strips of biscuit dough bake right in with taco-seasoned ground beef.

INGREDIENTS

1 1/2 lb lean (at least 80%) ground beef
1 package (1 oz) Old El Paso® taco seasoning mix
3/4 cup water
1 can (10 3/4 oz) condensed tomato soup
1 can (16.3 oz) Pillsbury® Grands!® refrigerated buttermilk biscuits
2 cups shredded Cheddar cheese (8 oz)
2 cups shredded lettuce
2 medium tomatoes, chopped
1 cup Old El Paso® Thick 'n Chunky salsa
1 can (2 1/4 oz) sliced ripe olives, drained
1 container (8 oz) sour cream
3 green onions, sliced, if desired

DIRECTIONS

1.Heat oven to 375°F. In 10-inch skillet, cook beef over medium-high heat 8 to 10 minutes or until thoroughly cooked, stirring frequently; drain. Add taco seasoning mix, water and soup; mix well. Heat to boiling. Reduce heat to low; simmer 3 minutes. Remove from heat.

2.Separate dough into 8 biscuits. Cut each biscuit into 8 pieces. Add pieces to beef mixture; stir gently. Spoon mixture into ungreased 13x9-inch pan.

3.Bake 18 to 23 minutes or until sauce is bubbly and biscuits are golden brown. Sprinkle with cheese. Bake 8 to 10 minutes longer or until cheese is bubbly.

4.To serve, cut pizza into 8 squares. Top each serving with remaining ingredients.

Homemade Refrigerator Biscuit Mix
Makes 10 cups
If making several batches of biscuits a month, or one biscuit at a time, make a flour-and-fat base mixture to add the milk to at a later time. It will keep several months in a tightly covered container in the refrigerator. Combine one part milk or buttermilk with two parts mix for any quantity of biscuits from 4 to 40! Once again, more salt and baking powder are added. This dough can also be used in making coffee cakes, pancakes, waffles, and the like.
Ingredients:
10 cups self-rising flour
3 teaspoons salt
5 teaspoons cream of tartar
4 teaspoons baking powder
2 cups chilled shortening, lard, or butter,
roughly cut into 1/2-inch piecesSouthern Biscuits
Directions:
Fork-sift or whisk the flour, salt, cream of tartar, and baking powder in a very large bowl. Scatter the shortening over the flour and work in by rubbing fingers with the shortening and flour as if snapping thumb and fingers together (or use two forks or knives, or a pastry cutter) until the mixture looks like well-crumbled feta cheese, with no piece larger than a pea.
Shake the bowl occasionally to allow the larger pieces of fat to bounce to the top of the flour, revealing the largest lumps that still need rubbing.
Store the mix in the refrigerator in an airtight container until ready to use.

After a long day of work, gym and grocery shopping, i finally get home (while still on the phone with my mom) and Jeff hands me a large envelope that came in the mail. After a bit of hesitation and asking Jeff to open it, I rip open the envelope then loudly swear (my mom is still on the phone, yes) as i give myself a nasty paper cut!! Not a good start i think... but luckily the results said i have completed the requirements to obtain my certification! I got 7 wrong answers out of 150 questions. There was no mention of my practical part of the test, but i suppose it went well since I passed. It is a relief, but now i have to keep my certification by earning 15 CEUs within a 2-year period and keep my CPR certification (renewal once a year). Now my next fitness goal is to get more classes to teach since i am only teaching 1 official class per week (step aerobics). I probably will have to apply at another gym.

Recipe:

Chocolate Sponge Cake:
1/4 cup (50 grams) plus 2 tablespoons (28 grams) granulated white sugar
6 large eggs, separated
1/2 teaspoon pure vanilla extract
4 ounces (112 grams) bittersweet or semisweet chocolate, chopped in small pieces
3/4 teaspoon cream of tartar

Chocolate Whipped Cream:
1 cup (240 ml) heavy whipping cream
1/2 teaspoon pure vanilla extract
3 tablespoon (40 grams) granulated white sugar
1 1/2 tablespoons cocoa powder (I use Dutch-processed)

Chocolate Sponge Cake: Preheat oven to 350 degrees F (180 degrees C) and place the oven rack in the center of the oven. Butter, or spray with Pam, a 17 inch (43 cm) by 12 inch (30 cm) jelly roll pan. Line the pan with parchment paper and then butter and flour the paper (or spray with Baker's Joy). Set aside.

While the eggs are still cold, separate the eggs, placing the whites in one bowl and the yolks in another. Cover with plastic wrap and bring to room temperature before using (takes about 30 minutes).

Meanwhile melt the chocolate in a stainless steel bowl set over a saucepan of simmering water. Set aside.

In the bowl of your electric mixer (or with a hand mixer) place the egg yolks and 1/4 cup (50 grams) of sugar and beat until this mixture is light and fluffy (about five minutes). (When you slowly raise the beaters, the batter will fall back into the bowl in a slow ribbon.) Beat in the vanilla extract. Add the melted chocolate and beat only to combine. Set aside while you beat the egg whites.

In a clean mixing bowl, with the whisk attachment, beat the egg whites until foamy. Add the cream of tartar and beat at medium-high speed until soft peaks form. Gradually beat in the remaining 2 tablespoons (28 grams) of sugar until stiff peaks form.

Gently fold a small amount of the egg whites into the egg yolk mixture using a rubber spatula or whisk to lighten the batter. Fold in the remaining whites just until incorporated. Don't over mix or the batter will deflate. Spread the batter evenly into the prepared pan with an offset spatula. Bake until the cake is puffed, has lost its shine, and springs back when gently pressed, about 15-17 minutes. Remove from oven and place on wire rack to cool. Cover the cake with a clean, slightly damp towel.

Chocolate Whipped Cream: In a large mixing bowl place the whipping cream, vanilla extract, sugar, and cocoa powder and stir to combine. Cover and chill the bowl and beaters in the refrigerator for at least one hour so the cocoa powder has time to dissolve. Beat the mixture until stiff peaks form.

Once the cake has cooled, spread with the chocolate whipped cream (set 2 tablespoons aside) and then gently roll the cake, peeling off the parchment paper as you roll. The sponge cake will crack, and, in fact, this makes it look more like a real log. Trim one end of the cake at an angle and set it aside. Then place the sponge cake, seam side down, on your serving platter. Take the slice of reserved cake and, using the reserved whipped cream, attach it to the side of the sponge cake (to look like the end of a branch). Cover with plastic wrap and chill until serving time. Just before serving remove the cake from the refrigerator, dust with confectioners (powdered or icing) sugar (to resemble snow), and decorate with meringue mushrooms (if desired). You can also decorate the Yule Log with miniature pine cones and pine needles.

Everyone loves these cookies. Here's my recipe: Ingredients: 8 ounces bittersweet chocolate, melted and cooled--1 1/4 cups all-purpose flour--1/2 cup Dutch cocoa powder--2 teaspoons baking powder--1/4 teaspoon salt--8 tablespoons (1 stick) unsalted butter, room temperature--1 1/3 cups brown sugar, firmly packed--2 large eggs--1 teaspoon pure vanilla extract--1/3 cup milk--1 cup confectioners' sugar, plus more for rolling
1.Heat oven to 350 degrees. Chop bittersweet chocolate into small bits, and melt over medium heat in a heat-proof bowl or the top of a double boiler set over a pan of simmering water. Set aside to cool. Sift together flour, cocoa, baking powder, and salt.
2.In the bowl of a heavy-duty electric mixer fitted with the paddle attachment, beat butter and light-brown sugar until light and fluffy. Add eggs and vanilla, and beat until well combined. Add melted chocolate. With mixer on low speed, alternate adding dry ingredients and milk until just combined. Divide the dough into quarters, wrap with plastic wrap, and chill in the refrigerator until firm, about 2 hours.
3.On a clean countertop, roll each portion of dough into a log approximately 16 inches long and 1 inch in diameter, using confectioners’ sugar to prevent sticking. Wrap logs in plastic wrap, and transfer to a baking sheet. Chill for 30 minutes. Cut each log into 1-inch pieces, and toss in confectioners’ sugar, a few at a time. Using your hands, roll the pieces into a ball shape. If any of the cocoa-colored dough is visible, roll dough in confectioners’ sugar again to coat completely. Place the cookies 2 inches apart on a Silpat-lined baking sheet. Bake until cookies have flattened and the sugar splits, 12 to15 minutes.
4.Transfer from oven to a wire rack to let cool completely. Store in an airtight container for up to 1 week.

The Oakton 35710-62 TempLog temperature and humidity data logger with kit has a handheld data logger that stores up to 16,000 measurements, allowing for data tracking over long time periods, and comes with software and an 8.2-foot cable. A datalogger is an instrument used for storing data and is commonly used in shipping, storage, laboratories, factories, refrigerators, freezers, incubators, dessicators and greenhouses.
This portable logger has a selectable sampling rate from once per ten seconds to once per two hours. The two-digit display shows current conditions in degrees C or F, and has the ability to switch to daily or hourly minimum/maximum values with the press of a button. Its built-in IrDA transmitter sends data to the optional IR printer for ease of recording readings, and the meter is Ingress Protection (IP)-65 rated for protection against liquids or solids. A display flashes an indicator if set point alarm limits are exceeded. The two-digit, LCD display is 0.375 inches high. A built-in clock and calendar track data in real time. The meter has an RS-232 port, and an IrDA interface to connect to a printer or a computer with an IrDA port. The meter’s dimensions are 2.80 (h) x 0.9 (w) inches, and it weighs 0.2 lb. The meter is used with one 3.6 V lithium battery (not included) for up to two years. It requires use of Oakton software (35710-50, included), and cable (included) to download readings, to set sampling rate and create graphs, to customize logging parameters, to set the logging interval, to select delayed or immediate start, to configure alarm limits, and to set to overwrite data or stop when full.

The boxed wine is a well designed product. First the case itself has a cut out handle with which the wine is easily carried around. The box is thin in width which allows for it to easily fit into most spaces of a refrigerator with the additional option of laying the box on its side for a shorter shelf when not in use. The bag that holds the wine is also a good design as it is vacuum sealed which allows the wine to be dispensed out of the bag upon turning the knob on the spout without letting air or oxygen in the remaining wine, as that would spoil the rest of the wine. This bag is why the product is able to be stored and drank over a long period of time as the quality of the product is not compromised after each use. Finally the spout has an intuitively designed knob which is requires little force to operate while securely keeping the wine in the bag.

Well, this is what is in my refrigerator.... Or at least part of the top shelf. Contents are: 1 bottle Martini mix, 1 bottle sparkling Rose', and 1 bottle of French dessert wine. To be honest, to the right, there are probably about 4 to 5 other bottle of liquor. Does this say something about me that it shouldn't????

The pic seemed kind of boring at first but at least I had some color to start with. I did some serious use of levels and curvers to push this over the top and I am pleased at how it turned out.
